Carrot Cake

Ingredients

  • 3 eggs
  • 200 ml corn oil
  • 200 grams of sugar
  • 30 grams of chopped mixed nuts
  • 2 teaspoons of cinnamon
  • 1 teaspoon of grated nutmeg
  • 220 grams of self raising flour
  • 200 grams of grated carrots
  • 1/2 tin of pineapple plus 2 soup spoons of the juice
  • 30 grams of butter
  • 50 grams of icing sugar
  • 30 grams of philadelphia cheese

Directions

  1. Mix the eggs with the corn oil, add the sugar, mix well. Add the nuts, cinnamon and nutmeg. Add the flour, than add the carrots, the chopped up pineapple and the juice. When all mixed put in cake tray in the oven for 1 hour and 20 minutes (maybe 10 minutes longer) on 160 degrees (fan oven) When cooled completely make icing: mix icing sugar with soft/room temp. butter. Then add the cream cheese. spread on top and mjam!
