Lemon Tart

Ingredients

  • 100 gram of soft butter
  • 2 soup spoons of icing sugar
  • 200 grams of flour
  • 5 eggs
  • 175 grams of caster sugar
  • 250 ml of cream
  • zest and juice of 3 lemons

Directions

  1. Mix the butter with the icing sugar and then add the flour. Add half an egg, loosened with a fork, to the mix to make a nice pastry. Cut the pastry in slices to line a ovendish easily. Put base in pre-warmed oven on 180 degrees (for fanoven), for 11 minutes. In the meanwhile, mix the rest of the eggs with the sugar in a bowl, add the cream, add the zest, add the lemonjuice. Mix well. Pour in cake base and bake for 43 minutes on 160 degrees. I find it easier to bake the base at the bottom of the oven and then pour the mixture in on top of it, rather than taking it out and trying to put it back in the oven, it will spill everywhere! If very wobbly when done, give it another 4 minutes, it does tend to be soft when just done and will firm up.
